Paul leads our Victorian operations with calm confidence and a deep respect for people and process. A seasoned hospitality professional and former owner-operator of several Melbourne venues, he brings more than fifteen years of hands-on experience, from running cafes and wine bars to designing service systems that hold up under pressure.

His leadership is grounded in connection. He is never far from the frontline, believing the best way to understand a team is to work alongside them, so every service runs smoothly and every moment feels intentional.

Away from operations, you will find him keeping active, at the pool, or with his wife and kids.
